ORDER WINE Again, one of our most popular wines, our good friend Jan Pierini, who owns Allegresse Vineyards, which contains 15+ acres of the most pristine and well manicured vineyards you’ve ever seen, supplied the fruit. While most vineyards produce around 10 tons per acre, she produces less than 4 tons an acre on single, right-turning cordons. The fruit we get from her vineyard is always perfect and poised every year to become a great wine. The grower, meticulous with the same commitment to excellence as our winery, practices selective fruit trimming, and at harvest inspects the grapes to pull only healthy bunches. For this trip we sent Our Transport Team in a 25 foot flat bed truck to pick up our largest shipment of the year in a grueling 24 hour turn around trip with minimal sleep and a lot of physical labor. The cabernet are rich in color, aroma and depth. While it may be enjoyed when it is young, its high tannin levels may be overwhelming to the uninitiated. Proper aging can result in a smooth and delicious wine with distinctive spice-accented, long-lasting flavors. This is a great deal when compared to the Laguna Canyon Cab, which uses the same fruit and is priced over $40 a bottle. Classic flavors include currant, plum, black cherry and spice. Look for notes of strawberry, cola, a bit of toasted cherries, sweet and dry at the same time. We anticipate this to settle down and evolve over the next 7 years. Price per bottle.
